Ingredients

  • 900 grams chicken breasts or drum sticks as per your preference
  • 4 cloves garlic chopped
  • 1 tsp black pepper powder
  • 1 tsp salt
  • 3 tsp smoked paprika
  • 1 tsp honey
  • 1 tsp white wine vinegar
  • 1 tbsp tomato ketchup
  • 1 tbsp brown sugar
  • 1 onion fine chopped
  • 2 tbsp worcestershire sauce
  • 2 tbsp olive oil extra virgin

Instructions

  • Mix black pepper powder, smoked paprika, brown sugar, garlic, salt, onion, and 3 tbsp of water to form a paste.
  • Gently make small cuts on the chicken and massage it with the mixture. Keep it overnight for marination.
  • Preheat the oven at 200 degrees and grill the chicken for 20 minutes.
  • Take out the chicken from oven and gently massage with a mixture of tomato sauce, Worcestershire sauce, honey, and vinegar. Leave 1/4th portion of the mixture aside. Let the chicken suck-in the flavours for 5 minutes.
  • Spray the chicken with extra virgin olive oil and grill it again for 20 minutes.
  • Take out the chicken and add the remaining mixture (from step 4). Serve with hot sauce!

Recipe # 2 – Thai BBQ Chicken

Ingredients

  • 900 gms boneless chicken breasts
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce dark
  • 2 pcs Thai red chillis finely chopped. save 1/4th portion for garnishing
  • 50 gms lemongrass fine chopped
  • 1 tsp black pepper powder
  • 1 tsp salt
  • 1 tsp coriander powder
  • 50 gms cilantro chopped
  • 2 tbsp brown sugar
  • 4 pcs garlic cloves chopped
  • 1/2 cup coconut milk
  • 1 pc ginger chopped - use 1" ginger piece

Instructions

  • Make a marinade by combining all the ingredients in a blender.
  • Massage the chicken well and refrigerate overnight.
  • Preheat the oven at 200 degrees and grill the chicken until soft. Keep turning every 5 minutes to maintain cooking consistency.
  • Garnish with Thai red chili and serve hot!

Ingredients

  • 1 tsp salt

  • 1 tbsp tamarind and dates chutney - see instructions below
  • 1 pc onion - chopped
  • 4 pcs garlic cloves
  • 1 pc ginger - about 1 inch
  • 1/2 cup hung curd
  • 1 tsp coriander powder
  • 1/2 tsp mango powder

Instructions

  • Mix all the ingredients into a blender and form a paste.
  • Prick the chicken with a fork and gently massage the marinade. Cling and let it rest for a minimum of 24 hours.
  • Preheat the oven at 200 degrees and grill evenly for 30 minutes. Take out the chicken and brush with some tamarind and dates chutney (as per your taste) and put it back in the oven for another 30 minutes or until the chicken is cooked.
  • Recipe for Tamarind & Dates Chutney
    Take a deep vessel and add about 3 liters of water. Add 10 seedless dates, 200 gms tamarind (pack available at any supermarket), 50 gms of Jaggery and 1 tsp of red chili powder.
    Bring the mixture to a boil and then let the juices mix well on a simmer until it is reduced to about 1 litre. Turn off the gas/burner and let the mixture cool. You can deep freeze the chutney for a month!

Ingredients

  • 2 tbsp rice wine vinegar

  • 2 tbsp brown sugar
  • 1 pcs korean red chilli - finely chopped
  • 3 tbsp corn syrup
  • 2 tbsp gochujang
  • 2 tbsp sesame oil
  • 3 pcs shallots - sliced

Instructions

  • Take all the ingredients along with 2 cups of water and blend.
  • The Sauce: Take a pan and pour the mixture from step 1 above. Cook the mixture for about 10 minutes on high flame.
  • Now take half of the mixture and massage the chicken gently. Store the remaining half from later.
  • Cling wrap and refrigerate for 12 hours for the flavors to kick-in.
  • Preheat the oven at 200 degrees and cook the chicken for 20 minutes.
  • Take out the chicken from oven and brush it again with the remaining sauce. Once again, cook the chicken for another 30-40 minutes or until the chicken is cooked.
